Mexican stuffed peppers



RECIPE INGREDIENTS

4 large bell peppers 

1lb ground turkey.

2 tablespoons chopped onion

1 teaspoon NAJO MEXICAN ALL PURPOSE RUB BLEND

1 clove of garlic, finely chopped

1 can of tomato sauce 

1 can of kidney beans or other beans of choice

1.5 cup shredded mozzarella cheese (6oz)

METHOD

1 Cut the pepper in half and remove  seeds and membranes; rinse peppers and put to one side.

2 In a 10-inch skillet, cook turkey and onion over medium heat 8 to 10 minutes, stirring occasionally, until turkey is brown; drain. Stir in NAJO MEXICAN SPICE BLEND, garlic and the tomato sauce; cook until hot and most of the liquid has evaporated.

3 Heat oven to 370°F.

4 Stuff peppers with turkey mixture. Place peppers  in ungreased 8-inch square glass baking dish or baking tray.

5 Cover with cheese and  Bake 30 minutes until peppers are tender and cheese is golden brown.

History

Stuffed peppers are part of traditional Spanish cuisine especially that of the region of the Basque Country. Usually fillings vary from Manchego cheese, to chicken, turkey, beef or fish in a red sauce; Turkey likely being the most popular recipe.
